Provided photo Provided photo Portabella mushrooms featured in new recipe book Monterey Mushrooms, the largest fresh mushroom grower in North America, created a meatless meals recipe ebook featuring Por- tabella mushrooms. The recipes, which include popular favorite foods such as pizza, enchiladas, a burger and lasagna, were developed for people looking for meat alternatives, said Lindsey Roberts, company marketing manager. "This time of year you have New Year's resolution dieters, people who do Meatless Mondays or those who are adopting the flexitarian trend of substituting meat with other things; mush- rooms work well for all those eating habits," Roberts said. Last year the company cre- ated an electronic guide to mushroom nutrition for retail customers so they could promote the health benefits of mushrooms to shoppers. Prior they released the Mushroom Small Bites & Beer Pairings guide that was well received by customers and consumers. "People are looking for information in digital formats and we want to make it easy to find," Roberts said. Mushrooms are high in umami and routinely act as a stand-in for meat. They can be used in lasagna to replace the meat, reducing calo- ries and fat in the process. Portabella mushrooms build flavor in longer-cooking dishes. Download the guide by visiting www.monterey- mushrooms.com and you will find: six recipes that use mushrooms in place of meat, information about umami and 12 ways to cook with mushrooms. The company is promoting the ebook via its social media channels and website.
