Rutherford Weekly's Favorite with M.A. ANDREWS Let's make a one dish meal! I'm going through the Mount Pleasant Baptist Church "That We May Live" cook- book and selected these tasty recipes. First off, I'm going to the kitchen and make an Easy Turkey or Chicken Pot Pie - I'm going to do chicken. It is a gift from LINDA SYLVESTER. 2 cups cooked chicken or turkey, diced; 1 can cream of celery soup, undiluted; 2 15-ounce cans mixed vegetables, drained; 1 1/2 cups chicken or turkey stock; 2 cups Bisquick baking mix; 1 stick butter, melted; 1 1/2 cups milk. Coat 13"x9'' casserole with melted butter. Mix first four ingredients and pour into dish. Blend together remaining ingredients until smooth. Pour over chicken or turkey mixture; do NOT stir. This is the top crust. Bake at 350º for 1 hour. This is almost too easy to be so good. Easy Turkey or Chicken Pot Pie Pinto Bean Casserole We all love pinto beans and love corn bread. Here is TIM SMITH'S recipe for Pinto Bean Casserole. (Yes, men are good cooks too). This is another too simple to be that good recipe. 1 large jar (24 ounce) mild salsa; 1 can pinto beans; 1 pound hamburger meat; 2 cups shredded cheese; 1 box Jiffy corn muffin mix. Cook and drain meat; put in bottom of baking pan; Put pinto beans on top of meat and spread jar of salsa on top of beans. Spread shredded cheese on top of salsa. Make muffin mix like directed on box; spread on top of cheese. Bake at 375º for 35 minuted until corn meal topping is golden brown. I'm taking this to the church supper. One Dish Dinner Here is a recipe from SUSAN HARRIS that's been around for a long time. Grandma's One Dish Dinner from her Grandma Vonnie Wells is passed on and shared. 1 pound ground beef; 1 large onion, chopped; 1 large bell pepper, chopped; salt and pepper to taste; 1 quart canned tomato juice (I used V-8); 1 8-ounce box macaroni, cooked and drained; 1 pound grated cheese for topping. Put meat, onion and pepper in pan. Cook until red is out of the meat. Mix all ingredients in baking dish. Top with grated cheese. Bake at 350º until done about 30 to 35 minutes. For a complete meal, all you will need is a bowl of salad. It deserves to be in your permanent cooking file. Sometimes, you will hear that nobody has time to cook. Well, that's not true, because you must remember that a lot of the recipes I offer were from some great cooks that had to take care of a lot of babies or get out on the farm and work. A good casserole was one dish and quick. It usually went in the oven as the kids went in the bathtub. So, get in the kitchen and show the love. When your family gives you a compliment it will be a "feel good" moment! Some of the best cooks in the world are here in Rutherford County!
