Rutherford Weekly Cooking By Allison Flynn Put meat on the menu for dad this Father's Day. Need inspiration? Then look no further than these steak recipes. Honey Bourbon Steak Tips 1/3 cup honey ¼ cup packed light brown sugar 1/3 cup bourbon ¼ cup soy sauce ¼ cup Worcestershire sauce ½ teaspoon red pepper flakes 2 garlic cloves, minced 2 pounds steak (rib-eye, sirloin, or filet), cut into chunks 2 tablespoons vegetable oil 3 tablespoons butter, divided 1 (6 oz.) package mushrooms, cut in quarters In a medium bowl, whisk together honey, brown sugar, bourbon, soy sauce, Worcestershire sauce, red pepper flakes, and garlic. Pour into a large ziptop bag. Add steak cubes and refrigerate for 2 to 4 hours. Heat vegetable oil and 2 tablespoons butter in a cast iron pan over medium-high heat. Add steak. You will prob- ably need to cook it in two batches because you don't want to crowd the pan. Cook until seared on all sides. Remove from pan. Add remaining butter to pan and cook mushrooms until browned. Easy Pan-Seared Sirloin 2 (4 - 6oz) sirloin steaks 1 tablespoon extra-virgin olive oil 2 tablespoons unsalted butter 1 clove minced garlic 1/4 teaspoon salt 1/2 teaspoon fresh ground black pepper 1/2 teaspoon parsley flakes In a small microwaveable dish, melt butter, and add garlic and parsley flakes. Microwave for just 20-30 sec- onds should do the trick. Add olive oil to pan and heat over high heat until pan is blazing hot (about 5 minutes). And make sure your vent is on. Add salt and pepper to steaks, both sides, and place in pan. Grill for 2 minutes and flip over. Spoon some of the butter mixture over the steaks and let grill for another 2 minutes. Flip steaks again, add more butter mixture and let cook for another 30 seconds per side until steak is done to your liking. Total cooking time will be 5-8 minutes. Remove from pan and add remaining butter mixture. Cover lightly with a piece of aluminum foil and let rest for 5-10 minutes before serving. Balsamic Steak Skewers 1/4 c. balsamic vinegar 1/4 c. barbecue sauce 1 tsp Dijon mustard 1 lb sirloin steak, cut into 1 in. cubes 2 c. cherry tomatoes In a large bowl whisk together the balsamic vinai- grette, barbecue sauce and dijon mustard. Reserve 1/2 c. of the marinade for basting. Marinate steak in marinade, tossing to coat. On four metal or soaked wood skewers thread beef and tomatoes in alternat- ing fashion. Using a long-handled tongs rub a paper towel that's been moistened with cooking oil over grill grates to lightly coat them. Place skewers on grill over medium heat, cover grill and grill until beef reaches desired doneness. Or broil about 4 inches from heat for 6-9 minutes. Turn occasionally and baste with reserved marinade during last three minutes of cooking. FOR SALE FOR SALE FOR SALE Fourth grade students from Sunshine and Mount Vernon-Ruth Elementary Schools recently walked the trail and learned more about the events of Oct. 14, 1870, on the return from the Battle of Kings Mountain at the Biggerstaff Hanging Tree historic site. Patriot troops, under the command of Col. Isaac Shelby, encamped on the property following the Battle of Kings Mountain. The trials and executions of nine loyalists occurred at the site. Students were directed to the hanging site by National Park Service Ranger Margo Blewett. Historian Chivous Bradley pointed out the 1780 roadbed from Kings Mountain. Students marched in formation to the historic site and took part in a mock trial. A historical marker for the site is located on Whiteside Road.
