Rutherford Weekly Cooking By Allison Flynn If you're looking to cut down your grocery expenses, then having a meatless night once a week is an easy way to do so. To curb spending and still have protein, incorpo- rate egg dishes into your dinner plans. Here are recipes in honor of National Egg Month from the North Carolina Egg Association. Tater Mater Frittata Potato Crust: ½ bag tater tots Frittata Filling: 6 eggs 1 tablespoon oil 1 small onion, chopped ¼ cup pepper, chopped 1(14 oz.) can rotel tomatoes and chilies (original) ¾ cup shredded Mexican blend cheese ¼ tsp. cumin ½ pickled jalapeno pepper – finely chopped ½ cup cream ½ can chopped green chilies Salt and Pepper 1 tablespoon chopped cilantro or parsley 1 large tomato – thinly sliced To make potato crust: Thaw tater tots and heat waffle iron. Spread tater tots to completely cover waffle iron. Close lid and cook for 5 minutes until crust is crispy and brown. Set aside. To make frittata: Sauté onion and pepper in oil just until soft. Beat the eggs vigorously and add the sautéed vegetables, rotel tomatoes and chilies, cheese, cumin, jalapeno pepper and chilies. Salt and pepper to taste. Place potato crust in frying pan and pour egg mixture over crust. Arrange slices of tomato evenly on top of frittata and sprinkle with chopped cilantro or parsley. Cook 2 minutes on stovetop on medium heat until edges are set. Transfer skillet to oven and bake at 375 degrees for 20-25 min- utes or until a knife inserted into the center comes out clean. Let cool before cutting into wedges and serving. Potato And Onion Frittata 2 tablespoons olive oil 2 cups diced red skin potatoes 1 cup diced onion 1 cup sliced mushrooms (optional) Salt and pepper to taste 8 large eggs, beaten 2 tomatoes, sliced 1/4 to 1/2 cup grated parmesan cheese (fresh) fresh chives or parsley Preheat oven on Broil setting. On stovetop, heat olive oil in a 12-inch ovenproof non-stick skillet. Add diced potatoes and onions (and mushrooms, if desired). Cook over medium heat until potatoes are fork tender, stirring frequently. Salt and pepper to taste. When potatoes are tender, pour beaten eggs over potato mixture. Stir to distribute. Cook until egg is mostly set and every- thing is beginning to brown on the bottom. Place sliced tomatoes over the top of the frittata and sprinkle cheese evenly over all. Put skillet in oven and broil for 3 to 4 minutes until top is nicely browned. (watch carefully!) Remove from oven and allow to cool for a few min- utes. Sprinkle with fresh chives or parsley. Serve from the pan or run spatula around the edges to loosen and slide out onto serving plate. Fiesta Victory Casserole 4 cups finely shredded sharp cheddar cheese ½ cup flour 1 teaspoon baking powder 1 teaspoon salt 2 cups small curd cottage cheese ½ cup butter, melted 3 (4-ounce) cans chopped green chilies 1 large onion, finely chopped 10 eggs, beaten Optional condiments – chunky salsa, sour cream, sliced avocado or guacamole In a large bowl toss cheese with flour, baking powder and salt. Add cottage cheese, butter, green chilies, onions and mix. Add beaten eggs and stir to mix com- pletely. Spray 13 X 9 X 2-inch baking pan with vegeta- ble spray. Bake at 350 F for 40-50 minutes or until knife inserted comes out clean. Serve if desired with salsa, sour cream, avocado or guacamole. 667 N. Washington 667 N.
