A s you fine-tune your planting plans for this sum- mer, don't overlook herbs. The often hearty plants can play a variety of roles in many situa- tions, said Ozaukee Master Gardener Susie Granzow. "Many of us have a very stereotypical idea of what herbs are: They must all be planted in a separate garden only for herbs or a whole bunch of little pots cluttering up your window sill," Granzow said. "If you grow them, it's only because you want to grow them to flavor your food. Right? Wrong." Botanists describe herbs as small seed-bearing plant with fleshy rather than woody parts, Granzow said. The Herb Society of America offers a much wider definition in its "Encyclopedia of Herbs and Their Uses." In addi- tion to the herbaceous perennials that botanists would recognize, the Herb Society says herbs also includes trees, shrubs, annuals, vines and more primitive plants like ferns, mosses, algae, lichens and fungi. They are valued for their flavor, fragrance, medic- inal and healthful quali- ties, economic and industrial uses, pesti- cidal properties and also for coloring materials. By this definition, plants as diverse as roses and raspberries or milkweed and mint are all defined as herbs. Their uses in your green-scaping plans are as varied as their variety, Granzow said. "You will want to grow them in your vegetable gardens, flower gardens and even in containers," she said. "They come in a variety of sizes, leaf tex- tures and colors."
