Rutherford Weekly Cooking By Allison Flynn Now that winter has arrived, cold mornings call for hot beverages. Hot chocolate can be enjoyed by all ages, and there's no reason you can't improve on packaged mixes. These recipes can help you along whether you want to spice up a packet or make your own from scratch. Salted Caramel Hot Chocolate 1 cup milk (or water) 3 tablespoons hot chocolate mix 1-2 tablespoons caramel sauce pinch of sea salt Heat milk and caramel for 90 seconds Add hot chocolate mix and pinch of salt. Stir until well dissolved. Makes one serving. Mexican Hot Chocolate 6 (12 ounce) cans evaporated milk 4 teaspoons ground cinnamon 1 tablespoon vanilla extract 1 teaspoon ground nutmeg 1 pinch cayenne pepper 2 (12 ounce) bags semisweet chocolate chips Cocoa powder, for garnish In a large pot over medium heat, whisk together milk, cinnamon, vanilla extract, nutmeg and pepper. Add chocolate chips. Stir until chocolate is melted. Cover and turn heat to low for 5 minutes. Serve with a dusting of cocoa powder. The Best Crock Pot / Slow Cooker Hot Chocolate 1 can (14 ounces) sweetened condensed milk 1 1/2 cups heavy whipping cream 8 cups milk 1 1/2 teaspoons vanilla extract 2 cups chocolate chips Add milk, sweetened condensed milk, whipping cream and vanilla extract to crock pot and quickly stir. Add chocolate chips to crock pot and mix in, so choco- late chips aren't piled in one place.Cover and heat on low setting for 2 hours. Stir occasionally.
