Don't forget to LIKE on on with M.A. ANDREWS Off my cooking shelf comes "A Taste Of Heaven" cookbook from New Hope United Methodist Women in Rutherfordton. Shepherd Pie MARY AYERS shares her recipe for our family favorite. Here is Shepherd Pie - always a crowd pleas- er. 2 1/2 pounds potatoes, peeled and cooked; 1 to 1 1/2 cups sour cream; salt and pepper to taste; 1 to 1 1/2 pounds of ground beef; 1 medium sweet red pepper chopped; 1/2 cup chopped onion; `1 15-ounce can whole kernel corn drained; 1 10 3/4 ounce can cream of mushroom soup undiluted; 1/2 cup milk; 1 teaspoon garlic salt; 2 tablespoons butter melted; minced fresh parsley. Mash pota- toes with sour cream; add salt land pepper and set aside. In a skillet, cook beef, red peppers and onion until meat is browned and vegetables are tender then drain. Add corn, soup, milk and garlic salt, mix well. Spread meat mixture in an ungreased 3 quart baking dish. Top with mashed potatoes; drizzle with butter. Bake uncovered for 30-35 minutes. A hearty meal to be enjoyed by all! Skillet Burgers Most of us have made or tried the famous Manwich. RUTH THOMPSON has a recipe that she calls Skillet Burgers and it is very good and similar. 1 1/2 pounds of ground beef; 1 large onion, chopped; 1/4 cup catsup; 1 tablespoon brown sugar; 2 tablespoons vinegar (I used apple cider vinegar - works better); 2 teaspoons Worcestershire sauce; 2 tablespoons mustard; salt and pepper to taste. Brown meat; pour off most of fat. Add other ingredients; simmer for 1/2 hour. Serve on hamburger buns. This recipe is simple and really good. I like it also because it is so simple to make. To me, it always has a better taste when I use ground chuck. Sausage Casserole MARTHA THOMPSON shares a good old tried and true recipe. Who doesn't like a Sausage Casserole? 3 cups hash browns, thawed; 1 pound sausage (I used hot); 3 cups cheddar cheese, grated; 1/2 bell pepper, chopped; 1/2 teaspoon salt; 12 eggs, beaten; 2 cups milk. Brown and crumble and drain the sausage. Lightly grease 13 x 9 casserole dish. Layer with hash browns, sausage, and peppers. Beat eggs; add salt and milk; mix well. Pour over other ingredients. Bake at 350º for 50 minutes. This is good anytime, but makes a great breakfast treat! So there you have it for this week. Tip: Sit down and plan your meals for each week. You will save money at the store by buying just what you need and it will be easier on you. Ask the family what they would like for each day of the week and work together. Good idea? You bet!
