Rutherford Weekly Cooking By Allison Flynn The weather has warmed up, and with even hotter days ahead, a cold treat is in order. Here are some homemade ice cream recipes for those days of front-porch sitting. 1 (14-ounce) can sweetened condensed milk 1 (5-ounce) can evaporated milk 2 tablespoons sugar 1-1/2 cups whole milk 1 (16-ounce) container fresh strawberries or 1 (16- ounce) package thawed frozen strawberries 2 tablespoons lemon juice 1/4 teaspoon salt Whisk first 4 ingredients in a 2-quart pitcher or large bowl until blended. Cover and chill 30 minutes. Process strawberries, lemon juice, and salt in a blender or food processor until smooth. Stir into milk mixture. Pour milk mixture into freezer container of a 1-quart electric ice- cream maker, and freeze according to manufacturer's instructions. (Instructions and times will vary.) Remove container with ice cream from ice-cream maker, and place in freezer 15 minutes. Transfer to an airtight container; freeze until firm, about 1 to 1-1/2 hours. No Cook Strawberry Ice Cream Ice Cream 2 cups whole milk 1-1/2 cups brown sugar 4 egg yolks pinch of salt 2 tbsp. unsalted butter 2 cups half-and-half 2 cups whipping cream 2 tsp. vanilla extract Candied Butter Pecans 1 cup pecans 1/3 cup sugar 2 tbsp. unsalted butter Prepare Ice Cream: In a medium saucepan, whisk together milk, brown sugar, egg yolks and salt. Place pan over medium-high heat until mixture reaches a simmer. Lower heat to medium and whisk mixture for 5 minutes or until it begins to thicken. Strain mixture into a large bowl and whisk in butter until combined; then incorporate half- and-half, cream, and vanilla. Cover with plastic wrap and refrigerate until chilled, about 2 hours. Prepare Candied Butter Pecans: In a heavy skillet over medium heat, combine pecans, sugar, and butter, stirring constantly for about 6 minutes or until sugar has melted and browned. Remove from heat; spread nuts on foil. Once nuts have cooled, break into bite-size pieces and reserve. Pour ice cream mixture into ice-cream maker; process according to manufacturer instructions. Once ice cream's made, stir in reserved pecans. Butter Pecan Ice Cream Cookies and Cream Ice Cream 2 cups heavy cream 1 cup whole milk 2/3 cup sugar 1 teaspoon vanilla extract 20 chocolate sandwich cookies Combine cream, milk, sugar and vanilla in a saucepan and heat until the sugar is completely dissolved. Pour into a bowl and cover with plastic wrap. Chill in the refrigerator or in an ice bath until completely cool. Place the chocolate sandwich cookies into a gallon size plastic bag. Using a rolling pin or a rubber mallet, break up the cookies being sure to leave some larger pieces. Store the cookies in the freezer. Freeze in an ice cream maker according to the manufacturer's instructions. When the ice cream is nearly finished freezing, pour the frozen cookie pieces into the machine, and allow to mix thoroughly. (You will still have to stir it up a bit after the machine is done.)
