What would be very helpful is some quick and easy pick ups for the holidays. That's is exactly what I intend to do. I'm going to the kitchen and make some easy and tasty pickups that you can share this Christmas season to family, friends, and guests. The Forest City Mt. Pleasant Baptist Church cookbook "That We May Live" is right on target. Tomato-Mazzarella Toast Thanks to YVONNE GREENE and MELISSA WELLS (Note: I just got off the phone and confirmed that Yvonne is Melissa's mom and Melissa Wells is the lady that just won $10,000 in the Rutherford Chamber of Commerce Reverse Raffle last week. Wow! Go figure!) Here is Melissa's recipe that her mom sub- mitted for her. It's easy and everyone likes them. 1 Thomas multi grain light English muffin; light margarine; tomato; fresh basil (or dried will do); salt and pepper to taste; 1/4 cup shredded moz- zarella cheese-part skim. Heat oven to 425º. Slice muffin to make 2 slices; spread margarine lightly over muffin. Over margarine, add sliced tomato, chopped basil, salt and pepper. Put cheese evenly over both halves. Bake for 8 minutes. Variation. I sometime add garlic, too. When I made them, I used 6 muffins and made 12. Make one for each guest. They'll love you for it. Another idea is to have several already made up and "keep 'em coming as long as the guests want them!" Corn Bread Fritters NANCY WALL has this easy recipe for Corn Bread Fritters. Simple. Easy. Tasty and popular with any family member or guest. 1 cup self-rising flour; 1 cup self-rising cornmeal mix; 1 1/2 cups finely chopped onion; 2 teaspoon sugar; 2 1/4 cups milk. Mix dry ingredients and onions. Add cold mile to make a medium batter. Drop 1 tablespoon batter at a time into hot oil. Turn only once. Drain on a paper towel. These are great by themselves or with a hot bowl of homemade soup. Angel Muffins I'm turning up my oven to 400º and making some Angel Muffins. This recipe is in memory of MURIEL LANE and given to us by BRENDA LANE. You can serve these with homemade jam or even peanut but- ter. 1 cup self-rising flour; 2 tablespoons mayon- naise; 1/2 cup sweet milk. Mix these into a batter and put into muffin tins that have been greased. You can also use cupcake paper liners. Bake at 400º until golden brown. This recipe is so easy and good it definitely is a keeper. My family loves them with dinner. It has almost replaced bread at our table. Peanut Butter Cookies Finally, I'm going to make a guaranteed popular goodie! This is the easiest recipe that I have ever seen for Peanut Butter Cookies. It's shared with us by LORI THOMPSON and STEPHANIE CHINN. 1 cup peanut butter; 1 cup sugar; 1 egg; 1 teaspoon vanilla. Cream peanut butter and sugar together. Add egg and vanilla. Roll into balls; place on cookie sheet; flatten with a fork. Bake at 375º for 8 to 10 minutes. CAUTION: DO NOT over bake. Most people do not realize that cookies continue to bake when you take them out of the oven. The secret to a good cookie is not to over bake them. Christmas and celebrate the birth of Our Lord by giving, loving and going to church. Also, don't forget to "get in the kitchen and show the love!" Some of the best cooks in the world are right here in Rutherford County and our nearby neighbors! Their time tested recipes are the reason we all love a good home cooked meal.
