CYNTHIA HEFFNER shares her recipe for Carmel Nut Pound Cake. 3 cups flour; 1/2 teaspoon baking powder; 1/2 teaspoon salt; 1 cup butter, softened; 1/2 cup Crisco shortening; 1 16-ounce package light brown sugar or 2 cups; 1 cup white sugar; 5 eggs; 1 cup milk; 1 tablespoon vanilla flavoring; 1 cup chopped nuts. Mix ingredients together and bake at 325-350 for 1 1/2 hours. How easy is this? Apple Cinnamon Snack Cake This weeks surprise recipe has got to be the heart healthy PARISH NURSES recipe for Apple Cinnamon Snack Cake. You start with a can of white beans! 15-ounce can white beans, pureed; 2 eggs, beaten; 1/4 cup water; 1 medium apple peeled and chopped; 1 cup sugar; 1 cup whole-wheat flour; 1/2 teaspoon baking powder; 1 teaspoon cinna- mon; 1/2 teaspoon nutmeg. Preheat oven to 350º and spray 8 x 8 baking pan with vegetable spray. Combine first 5 ingredients, mixing well. Combine flour, baking powder and spices with wet ingredi- ents and mix well. (If batter is too thick, add a little more water). Pour batter into sprayed pan and bake for about 40 minutes. Serves 12 and each serving is only 129 calories! Who would have ever thought beans? Try this recipe and the conversation that follows with your friends is worth the bake. Oatmeal Drop Cookies How about a no bake recipe? Here is ANGIE CUTHBERTSON'S recipe for Oatmeal Drop Cookies. 2 cups sugar; 1 stick margarine (I use butter); 1 tablespoon cocoa; 1/2 cup milk; 3 cups oatmeal; 1/2 cup peanut butter; 1 teaspoon vanilla flavor- ing. Mix in small saucepan, sugar, butter, cocoa, and milk. Heat to a boil for about 2 minutes. Take off heat and quickly pour in a large mixing bowl already ready with oatmeal, peanut butter and flavoring. Stir well. Drop with a spoon on waxed paper. Cool. Watch these goodies disappear. Aunt Hope's Lemon Cheese Squares LORA TESSENEER shares her recipe for Aunt Hope's Lemon Cheese Squares. 1 box lemon cake mix; 1 box 10x powdered sugar; 2 eggs; 1 stick butter, softened; 1 container (8 ounce) cream cheese softened; 1/2 teaspoon water. Mix together, pat mixture evenly into a casserole dish sprayed with pam. Bake at 350º until lightly browned, 35 to 40 minutes. Cool. Cut into squares. Dust with powdered sugar.
