Vegetable casseroles can be a one dish meal or an added pleasure to steaks, pork chops, or chicken. I'm in the kitchen and starting out with a lazy and easy cas- serole dish that is really good. I like it best with chicken. Today's recipes are shared with you from the cookbook "What's Cooking At Tanner's Grove", Second Edition. Easy Rice Casserole Here is AMANDA BROOKSHIRE'S recipe for Easy Rice Casserole. 1/2 stick butter; 1 medium onion, chopped; 1 cup uncooked rice; 1 can consomme; 1 can beef bouillon. Melt butter in a skillet; add onion and saute in a 1 1/2 quart casserole dish. Add uncooked rice. Pour Consomme and bouil- lon and stir. Bake, covered, at 350º for about 30 minutes. Uncover and bake 5 to 10 more minutes. Tip: I tried this with a can of diced tomatoes - mighty tasty! Squash Casserole This recipe from TERESA SAMS and CAROLYN WOOD is one that I use with any squash. It works every time and is a welcomed dish at the supper table. Squash Casserole. 4 to 5 medium squash, cooked drained and mashed; 2 beaten eggs; 1/2 cup grated Cheddar cheese (medium or sharp); 3 tablespoons butter; salt and pepper; Ritz crackers (about 1 tube). Mix all ingredients together except crackers. Pour into baking dish. Top with crushed crackers sauteed in butter. Bake 20 to 30 minutes or until done. 350º degree oven. Sweet Potato Casserole If you want to win a popularity contest, here is the guaranteed winner! DIANNE REEP shares her recipe for Sweet Potato Casserole. 3 cups mashed sweet potatoes; 1 cup sugar; 1 stick melted margarine; 2 eggs, beaten; 1 teaspoon vanilla; 1/4 teaspoon salt; 1/3 cup milk. Topping: 1/2 cup brown sugar; 1/4 cup flour; 2 tablespoons butter; 1/2 cup chopped pecans. Beat potatoes, sugar and butter together. Add beaten eggs and again mix well. Add vanilla, salt, and milk and mix well. Pour into baking dish. Mix topping and sprinkle over pota- toes. Bake at 350º until lightly brown. Tip: I put every- thing except topping in my electric mixer in stages and it comes out great. It's also a little lighter in texture. I make the topping manually. I take this recipe often to church suppers and everyone wants the recipe. We run out so fast I sometimes make two to take. My grandmother, mother and dad always spent time in the kitchen. They felt it was a pleasure to make things homemade. Now you know why I enjoy it. Let's all "get in the kitchen and show the love."
