I came upon some great cran- berry recipes while browsing through Spindale's Advent Lutheran Church's "ADVENTures in Cooking" cookbook. So today, I'm going to the kitchen and make these super special treats! Cranberry Yogurt Coffee Cake EVELYN SAPPENFIELD offers her recipe for Cranberry Yogurt Coffee Cake. 1 - 18 1/2 ounce package yellow cake mix, 1 - 3 3/4 ounce pack- age vanilla instant pudding mix, 4 eggs, 1 cup unflavored (plain) yogurt, 1/4 cup vegetable oil, 1 -16-ounce can Ocean Spray whole cranberry sauce, 1/2 cup chopped nuts (I used black wal- nuts which gave it a distinctive taste). Preheat oven to 350º. Generously grease and lightly flour a 9 x 13 x 2 inch pan. In a large bowl, blend cake mix, pudding mix, eggs, yogurt and oil. Beat with electric mixer on high for 3 minutes. Scrape bowl often. Spread 2/3 of batter in prepared pan. Spoon cranberry sauce evenly over it. Spoon remaining batter evenly over cranberry sauce. Sprinkle with chopped nuts. Bake 55 to 60 minutes. Cool on rack for at least 35 minutes. It will make 20 delicious servings. This, my friends, is very good. It also makes a nice holiday gift. Cranberry Cheese Bars Another Evelyn - EVELYN BAILEY - has a recipe for Cranberry Cheese Bars which I find are very fes- tive, delicious and great anytime, but especially good during the holidays. 2 cups plain flour, 1 1/2 cups quick oats, uncooked, 3/4 cup packed brown sugar, 2 sticks butter, softened, 13/4 cups M & M's chocolate mini bits/divided in half, 1 8-ounce package cream cheese, 1 14-ounce can sweetened condensed milk.1/4 cup lemon juice, 1 teaspoon vanilla, 2 tablespoons vanilla, 1 16-ounce can whole berry cranberry sauce. Preheat oven to 350º. Grease a 13 x 9 inch pan; set aside. In a large bowl, combine flour, oats, sugar and butter. Mix until crumbly. Reserve 1 1/2 cups crumb mixture for topping. Stir 1/2 cup M & M's into remaining crumb mixture. Press into pan. Bake crust 15 minutes. Cool completely. In a large bowl, beat cream cheese until light and fluffy (I used my mixer). Gradually mix in condensed milk, lemon juice and vanilla until smooth. Pour evenly over cool crust. In a small bowl, combine 1 tablespoon brown sugar, cornstarch and cranberry sauce. Spoon over cream cheese mixture. Stir remaining M & M's into reserved crumb mixture. Sprinkle over cranberry mixture. Bake 40 minutes. Cool at room temperature. Refrigerate before cutting. Store in refrigerator in tightly covered container. Makes 32 bars. You just can't beat these recipes for great presentation, compliments and even gifts. So, get in the kitchen and show the love.
