A good cobbler is always welcome in September and the coming fall season. I've got some great recipes from Second Baptist Church's "Recipes & Memories" cookbook. In to the kitchen I go getting ready to make three cobblers. One for home, one for work, and one for church. Pumpkin Crisp The first I'm going to make is DEBBIE WATTS recipe for Pumpkin Crisp. It's absolutely delicious and soon becomes in demand once you have served it. 16 ounce can solid pack pumpkin, 14 ounce can sweetened condensed milk, 1/2 cup sugar, 1 teaspoon nutmeg, 1 teaspoon cinnamon, 3 eggs, 1/2 box yellow cake mix,1 cup chopped pecans, 1 cup melted margarine or butter (I used butter). Grease a 9 x 13 inch pan with nonstick cook- ing spray. Mix pumpkin, milk, sugar, cinnamon, nutmeg, and eggs. Pour into pan. Pour dry cake mix over the above mix. Pat nuts evenly over dry mixture. Spoon melted butter over nuts. Bake at 350 degrees for approximately 50 minutes or until toothpick comes out clean. Refrigerate leftovers. This is a recipe that doesn't get enough credit for how good it is! 1 Cup Cobbler To anyone who has ever made a cobbler, the "one cup recipe" is always a winner! You can make any fruit cobbler with this simple but fool proof recipe. SHELIA PIERCY shares this great recipe. I'm using it to make a Peach Cobbler. 1 stick margarine (I prefer butter), 1 cup self-rising flour, 1 cup milk, 1 cup sugar, 1 quart peaches. Combine butter, sugar, flour and milk. Pour into casserole dish. Add peaches. Do not stir. Bake at 350 degrees until golden brown. Tip: I preheat the oven and put the butter in the casserole dish to melt and then put the rest of the mixed ingredients in the dish. Then add the peaches. Works great. Apple Crisp Cobbler This has replaced apple pie in my family. It's even easier to make. Here is BRENDA HENDRIX's recipe for a proven favorite - Apple Crisp Cobbler. 4 cups apples, sliced, 1/4 cup water, 1 teaspoon cin- namon, 1/2 teaspoon salt, 1 cup sugar, 3/4 cup flour, 1/3 cup soft butter. Mix sliced apples, water, cinnamon and salt in casserole dish. Mix sugar, flour and butter in bowl until crumbly. Spread this mixture over apples. Bake uncovered about 40 minutes in 350 degree oven. I believe I'll take the Pumpkin Crisp to church, share the Peach Cobbler at work and keep the Apple Crisp for home. It's always good to make something special for friends when you're in the kitchen and showing the love! See you next week! Don't forget to bring your appetite.
