Rutherford Weekly's Favorite with M.A. ANDREWS CAROLYN MCABEE shares her recipe for Applesauce Cake Loaves. 1 cup butter, 2 cups sugar, 2 eggs, 2 teaspoons vanilla, 2 cups apple- sauce, 3 1/2 cups all purpose flour, 2 teaspoons baking soda, 3 teaspoons cinnamon, 1 teaspoon cloves, 2 cups walnuts, chopped, 1 cup raisins (optional) (I used golden raisins). Cream butter and add sugar gradually. Add eggs and vanilla. Heat applesauce. In another bowl, mix flour, bak- ing soda and spices. Add this mixture, alternately with hot applesauce to the sugar/butter mixture. Stir in nuts and raisins. Pour batter into 2 greased and floured 9 x 5 x 3 inch loaf pans. Bake at 350º for 45 minutes or until a toothpick inserted into cake comes out clean. This is a great recipe which you should treasure. I made sandwiches with this with softened cream cheese in the center. This week I'm sharing recipes from the "Homemade With Love" cookbook from Gray's Creek Baptist Church in Rutherfordton.
