One of the more popular items during Thanksgiving and Christmas which families enjoy are great casseroles. I’m going to the kitchen and am mak- ing some casseroles which I found in Second Baptist Church’s of Rutherfordton “Recipes & Memories” cookbook. By the way, I had the pleasure of meeting CAROLYN SCISM from the Chase Community at the dedication of Crestview’s new church. Carolyn col- lect all my recipes. So, this week I’m dedicating the column to a great lady! For now, I’m headed to the kitchen and what better holiday casserole can I make than SWEET POTATO CASSEROLE from HILDA CALLAHAN. This recipe is not good, it’s great! I love the topping! 3 cups cooked and mashed sweet potatoes 1 cup sugar 1/2 cup melted butter 2 eggs, beaten 1 teaspoon vanilla 1/3 cup milk Combine all ingredients in a large bowl and mix well. Pour into a 2 quart casserole dish. Then mix topping (see below) and sprinkle over sweet potato mixture. Bake at preheated 350º oven for 30-40 minutes (until topping is brown). Once you make this your family will be sing- ing the Beatles song “Love Me Do”. Topping: 1/2 cup firmly packed brown sugar 1/3 cup plain flour 2 1/2 Tbs. butter 1/2 cup chopped nuts (I prefer pecans) Next, I’m making a very nice SQUASH CASSEROLE compliments of LENA ELLENBURG. If you can’t find fresh squash, use fro- zen. Incidentally, I’ve made this recipe using zucchini squash and it’s great. The only thing I added was a sprinkling of Italian spices. 2 lbs. yellow squash, cut up 1 onion, quartered 1 can cream of chicken soup (do not dilute) 1/2 cup sour cream 6-7 strips bacon, crumbled 8 oz. shredded cheddar cheese (reserve 1/4 cup for garnish) stuffing mix or bread crumbs Cover squash and onions with enough water to blanch (quick cook) , drain and cool. Mix together soup and sour cream and gently mix in squash. Add bacon crum- bles and shredded cheese, pour into casserole dish. Sprinkle reserved cheese rutherford county cooks m.a. andrews Hilda Callahan ★ Nina Ellenburg ★ Judy Higgins and stuffing mix on top. Bake at 350º for 30-40 min- utes. If you like pineapple and cheese, this recipe from JUDY HIGGINS will become a favorite. Here is here recipe for PINEAPPLE CHEESE CASSEROLE. 2 large cans chunk pineapple, drained 1 cup sugar 6 tablespoons flour 2 cups sharp cheddar cheese (I used chopped) 1 sleeve Ritz crackers 1 stick margarine, melted (Of course, I use butter). Mix together pineapple, sugar, flour and cheese. Pour in a large casserole dish. Crush crackers and add to melted butter or mar- garine. Spread over pine- apple. Bake at 350º for 30 minutes. Simple, easy, mighty tasty. I’m getting quite a response about last weeks “slurping” sign. Humm! Maybe I should make some and sell them. Or, even better, bumper stick- ers that proclaim “Have You Slurped Today?”. Maybe even a Slurpers Club!” Three loud slurps and you’re a member! See you next week, mean- while, get in the kitchen and show the love! Some of the best cooks in the world are right here in Rutherford County! Their time tested recipes are the reason we all love a good home cooked meal. We proudly share these good recipes with you!
