SPEEDWAY CHICKEN Betty Sue Morris 12 boneless skinless chicken breasts ¼ cup olive oil (extra virgin) 1 ½ T. black pepper 2 tsp. minced garlic 1 tsp. herb chicken seasoning 1 tsp. lemon pepper 1 T. Worcestershire sauce 1 T. mustard 2-3 T. barbecue sauce ¼ cup Zesty Italian dressing Add all the ingredients except chicken in a one-gallon reseal- able bag. Add the chicken to the bag. Marinate one to four hours. Keep refrigerated until cook time. Grill until deep golden brown. Make sure the center is juicy. CROCK POT CHILI Barbara Hawkins 1 (16 oz.) can pintos 1 (16 oz.) can baby lima beans 1 (16 oz.) can pork and beans 1 lb. ground beef 1 cup chopped onion 1 cup ketchup ¼ cup brown sugar 1 T. vinegar Brown hamburger and on- ions. Drain off grease In crock-pot mix brown sugar, ketchup, and vinegar. Add pintos, limas, and pork and beans. Cook 4 hours on low. Can serve as soup, side dish or main dish. PINEAPPLE CASSEROLE Adelaide Allison 1 (20 oz.) can pineapple tidbits, drained ½ cup Velveeta cheese ½ cup sharp cheese, grated 3 T. flour ½ cup sugar ½ stick butter or margarine Ritz cracker crumbs, app. 1 sleeve Pour pineapple in casserole dish. Mix flour and sugar and stir into pineapple. Stir in cheese and cover with crumbs. Drizzle melted butter over the top. Bake at 350 for 30 min- utes. Serves 6 to 8. PEACH CRISP Betty Spears 1 stick margarine ¾ cup sugar ¾ cup self-rising flour 1 lb. can peaches Melt the stick of margarine. Mix ¾ cp sugar and ¾ cup self-rising flour. Spread over margarine in baking dish. Place peaches on top of flour mixture. Do not use syrup from peaches. Bake 300 de- grees for 1 hour.
