Stir in pumpkin puree, cream, butter, 1/2 teaspoon salt & 1/2 teaspoon pepper; set aside. Preheat oven to 375 F. In large skillet over medium heat, heat oil. Add spinach & garlic; cook 2-4 minutes, or until wilted. Let cool completely; squeeze out excess moisture. Season with 1/4 teaspoon salt & 1/4 teaspoon pepper. In medium bowl, combine ricotta, egg & spinach. Stir in 1 cup mozzarella, 1/2 cup Parmesan cheese & remaining salt & pepper. Layer half of rice mixture in greased 8'' square baking dish. Top with spinach mixture & remaining rice mixture. Sprinkle with remaining mozzarella & Parmesan. Cover with foil; bake 30 minutes. Remove foil; bake 15-20 minutes, or until golden brown & bubbling. Bring to boil. Stir in turkey & coconut milk; return to boil. Reduce heat to medium-low. Cook 5-8 minutes, until turkey is heated through. Stir in rice; cover, remove pan from heat. Cook dry pasta according to package instructions until al dente. Strain pasta, reserving pasta water. In large saucepan over low heat, warm pasta sauce 3-5 minutes. Add 1-2 tablespoons pasta water. Transfer cooked pasta to saucepan. Stir & toss pasta approximately 30 seconds over medium heat to integrate it with sauce. Add pasta water as needed for creamier texture. Plate pasta & top with finely grated Pecorino Romano & freshly ground black pepper, to taste. SWEET POTATO TACOS Find more recipes at 1/2 pound ground turkey 3 tablespoons taco seasoning 1/2 cup tomato sauce 1 can (15 oz.) black beans, rinsed and drained nonstick cooking spray 2 lbs. North Carolina sweet potatoes, peeled and cut into 1/2-inch cubes 2 tablespoons butter 3/4 teaspoon salt 1 1/2 cups fresh chopped spinach 1 1/2 cups shredded cheddar cheese sour cream (optional) guacamole (optional) Preheat oven to 425 F. Brown ground meat. Stir in taco seasoning, tomato sauce & beans; set aside. Spray six 12'' aluminum foil pieces each with nonstick cook- ing spray. In center of each foil piece, place 1 cup sweet potatoes, 1 teaspoon butter, 1/8 teaspoon salt, 1/4 cup spinach, 1/3 cup taco meat & 1/4 cup cheese. Fold foil sides in over mixture; fold top & bottom foil ends inward and seal. Place packets on rimmed cookie sheet; bake until sweetpo- tatoes are tender, about 25 minutes.
