In a mixing bowl, add your almond fl our and maple syrup and mix until combined. If the dough is too thick, add a little extra syrup. If it is too thin, add more almond fl our. 2. Using your hands, shape the mixture into a smooth ball of dough. Cover it in plastic wrap and place it in the refrigerator for an hour. 3. Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside. 4. Remove the dough from the refrigerator and place it between two sheets of parchment paper. Using a rolling pin, roll out the dough until it is half an inch in thickness. 5. Remove the top sheet of parchment paper and use a cookie cutter to cut shapes out. Place the cookies on the lined baking sheet. 6. Bake the cookies for 10-12 minutes, or until the cookies begin to brown around the edges. 7. Remove the cookies from the oven and let them cool completely, before adding your icing, if desired.
