I sat in our kitchen one early morning, rocking, reading and refl ecting; getting ready to enjoy the day. The window was open and I heard geese honking. They congregate around a pond surrounded by a huge grain fi eld. They evidently wake up honking because I hear them so often. As I sat listening to their early morning fun, I thought about how the goslings born this spring will soon fl y further south for the winter. And wondered how they know to do that. They don't have the Weather Channel to know when the fi rst blast of Artic air resident in a low-pressure system comes sweeping down from Canada. They don't listen to the local radio stations and get the latest report from in-studio, live, color radar. They don't read the local paper to catch the fi ve-day forecast. They don't have a weather app on their iPhone or Droid. I suppose you could say they just follow the rest of the birds, but still... These geese have within them the desire to fl y south and then north again and the knowledge for when. So if the geese are taken care of like this, how much more good stuff of life will you receive if you just ask? CORN BEEF CASSEROLE Betty Cash 1 (8 oz, pkg.) egg noodles 1 can corn beef 1 small onion chopped 1 cup sharp Cheddar cheese, grated 1 can cream of chicken soup 1 cup milk 2 cups buttered breadcrumbs Grease or spray 9x13 inch casserole dish. Cook and drain noodles. Chill and slice corn beef. Layer the noodles, beef, onion, and Cheddar cheese in the cas- serole dish. Mix soup and milk and pour over layers. Top with breadcrumbs. Bake at 350 for 30 minutes or until golden brown. LONDON BROIL Mary W. Adams 3 lbs. top round steak 3 tsp. Adolph's meat tenderizer 2 T. sugar 4 T. sherry 4 T. soy sauce 2 tsp. salt 2 tsp. Accent Pierce meat all over with the above ingredients. Mix them well before piercing. Marinate 6 hours, turning every 90 minutes. Broil on grill. Serves 6. SUNDROP POUND CAKE Shirley McMurry 3 cups sugar 1 ½ cup shortening 5 eggs 3 c. sifted flour 1 c. Sun Drop 1 tsp. vanilla 1 tsp. lemon flavoring Cream sugar and short- ening. Add one egg one at a time and beat well. Add flour alternately with Sun Drop and flavoring ending with flour. Pour into tubed cake pan and bake at 325 degrees for 1 hour and 15 minutes. LEMON DELIGHT Joanne Pruette 1 stick of butter at room temperature 1 c. self-rising flour ½ cup chopped pecans 1 (8 oz.) pkg. cream cheese 1 c. powdered sugar 1 large Cool Whip 2 cans sweetened condensed milk 1 cup lemon juice Small container Cool Whip Mix butter, flour, and pe- cans. Bake at 325 for 15 minutes in 9x12 iron pan. Combine cream cheese, sugar, and then add Cool Whip and spread over crust. Mix condensed milk and lemon juice well and spread over cream cheese, sugar, and Cool Whip. Top with small container of Cool Whip. Choose From.
