AUTOS-TRUCKS rutherford county cook Often when I am out and about, I run into someone who asks me to give them some good and simple reci- pes. While I believe that good food is not hard to create, I like to see people experiment in taste! This week I’m going to the kitch- en and making some very tasteful and creative chicken dishes. I’ll start with LINDA GILBERT’S recipe for LAZY CHICKEN PIE. This is a keeper! Linda is part of the ladies who put together “A TASTE OF HEAVEN” cook- book from New Hope United Methodist Church. I’m in the kitchen and have turned the oven on to 350º. 1 chicken, cooked and deboned 1 can cream of chicken soup 3/4 cup water 1 1/2 cup self-rising flour 3/4 stick margarine (or butter), softened 1 1/2 cup milk 2 cups chicken broth (I used the broth which I strained and made from cooking the chicken). Layer the chicken in a 13x9 pan. Mix soup and water together; pour over chicken. Combine flour, mar- garine (butter) & milk; pour over chicken mixture. Pour broth on top. Bake at 350º for 46-60 minutes (depend- ing on size of chicken). Very tasty and goes well with homemade biscuits. TIP: Don’t let cooking the entire chicken stop you from making this dish. Wash the chicken in cold water and put it in a big pot of water and cook until done. It’s easy and the taste is so much better. I strain and use the broth for other dishes or take my ice cube trays and make “chicken broth cubes” which, after freezing, I keep in a freezer bag in the refrig- erator. They come in very handy. If you have a slow cooker then here is a recipe that will make your taste buds jump. BARBARA SHELL shares her recipe for LEMON ROASTED CHICKEN. It’s terrific! I served it with brown and wild rice cooked in chicken broth. The nice thing about this recipe is that you get it together, put it in the crock pot and forget it for ten hours. I usually get mine going about 7:30 a.m. and it’s ready at 5:30 p.m. The wonderful aroma will make everyone hungry. 3-4 pound chicken 1/2 onion chopped 2 tablespoons butter juice of 1 lemon 1 tablespoon parsley 1/4 teaspoon salt 1/4 teaspoon thyme 1/4 teaspoon paprika Rinse chicken well in cold water and pat dry; remove excess fat. Place the onion in the cavity of the chicken and rub the skin with the butter. TIP: I also put some but- ter under the skin). Place the chicken in a slow cooker. Squeeze the juice of the lemon over the chicken and sprinkle with the remaining seasonings. Cover and cook on low for 10 hours (or on high for 6 hours). This is a great rec- ipe! (I usually add chicken broth to the slow cooker to keep it moist; about a cup). Here’s another recipe for a busy cook. The title, rutherford county cooks m.a. andrews Linda Gilbert ★ Barbara Shell ★ Janice Jolley MAKE IT EASY CHICKEN says it all. It’s from JANICE JOLLEY. 1 large Reynolds Oven Bag (14x20) 2 tablespoons flour 1 envelope onion soup mix 1 cup water 3 medium carrots, cut in chunks 2 medium red potatoes cut in wedges 1 medium green bell pepper cubed 6 chicken pieces, skin removed seasoned salt and pepper Preheat oven to 350º. Shake flour into oven bag; place in 9x13 baking pan. Add soup mix & water to bag; squeeze bag to blend flour. Add carrots, potatoes & green pepper to oven bag; turn over bag to coat ingre- dients in bag with sauce. Sprinkle chicken & vegeta- bles with seasonings; add to oven bag. Arrange chicken & vegetables in an even layer in oven bag. Close bag with tie; cut six 1/2 inch slits in top of bag. Place in baking dish. Bake 55-60 minutes or until chick- en is tender. For anyone who wants a quick clean up after cooking, these Reynolds Oven Bags are really great. That’s it for this week. I’ve been in the kitch- en showing the love.
