Winslow senior citizens are meeting on Monday and Tuesday at the Snyder Community Center. Petersburg seniors meet in the courthouse basement. This postcard has three scenic views: Neptune's Kingdom has a glass front en- trance with an octopus, whales and oth- er underwater animals. The building has colorful painted walls with an elab- orate top. Second, is a big roller coaster, and third is another long building of tan to dark brown, sitting on the beach by the blue ocean. San- ta Cruz Beach and Boardwalk; Santa Cruz, known as "Sun City," boats expecting waves, sunny beaches, scenic forest, home to the west coast's oldest seaside amusement park. One the back: "Hello Sweets, Greet- ings from the Golden State. I am in central California to at- tend a good friend's wedding. Having a good time. This area is near the Salinas Valley. It's awesome always see- ing all the large vegetable farms here. Your friend, Max Carlisle, Stendal, Ind." We loved the postcard of Santa Cruz and the area sounds like a place to visit and see the west coast. Winslow Patoka River at Riverside Park is high to the rim, as we had severe storms come into the Tri-State and we should have gotten over two inches of rain. We also had a strike of lightening, then a crack of thunder that had a rum- bling in the air. The wind gust was up to 40 mph. Oh, I just looked at my notes and we did have some snow flurries early on Friday the 8th, but was gone in no time from the rain. Winslow temps started off in the cold 40's and 50's, with a few nights at freezing. But then the 60's and low 70's appeared, and then we turned down the heater and opened the windows. The purple and the white-purple little flowers look pretty in several yards. In our yard we have a tree with a swing, and under the tree is a blanket of white cir- cling the tree, then a patch of leaves be- fore you see the purple color. In another area, we have a blanket of purple that sur- rounds the garden spot. More and more flowers, like the Peonies, are growing taller and some trees of white are now changing to a green leaf. Soon it will be the planting season in fields and yards, more beauty of colors to see. Zoe, the dog, got her shots and she did really great in the exam room. When the other dogs barked, she kept her cool and was a good girl. Since Norm has trained her more, Zoe has packed on some mus- cles and she has taken her training in fun, as Norm also played with her even when he was tired. Zoe loves to play, play and play some more; rest comes only for a few minutes. Turtle and Annie have a place to stay, which is close to their work and now they can take Zoe; in which, they did on Monday, April 11, along with all of her toys. Before they left, one tire on their car was low, so it was aired up, but then a sound of air was heard. They had the tire plugged with the help of Jim's Trac- tor Works, while the tire was being worked on, they looked at all the tractors at the shop. A fter that, they were on their way. At the Happy Hour Restaurant there are more workers; Kyana, Isaiah and Em- ily work on weekends at the buffet. Mildred, my mom, is at Golden Living to recuperate from an infection. She can have visitors; so, the six of us kids, plus spouses, went for a visit and she was in good spirits. But some days she needs more sleep. We also saw Erica and Sher- ry, who work there; and Mom gets to see more stars to talk to. Did you know that on April 8, 2024, there will be a solar eclipse that can be seen in our area? We won't have to trav- el far to view this event. Evansville is al- ready planning for this big event. I guess you all got your Pike County property taxes, and we have ours paid for; and probably a few more got theirs paid also. Jasper and a city in Ohio were in the running for the Best City to Visit; and Jasper won the title last week. There are new eateries up all along Route 231, and the church has the scaffold down from sandblasting- for painting, and other im- provements have been made. Easter hasn't happened yet, but we hope your day with family was great. If you have little ones, we hope their egg hunting made you smile and laugh, whether they experienced their first time or were older and had fun finding eggs in the daffodils or on the grass. Do your kids love to eat hard boiled eggs? Laura and Kyana loved to eat theirs as a snack. The lights are about to dim for this week. Keep an eye on family and friends. Slow down and see all the wonders in your area. Always smile, wave and say "hi" to everyone you see this week. KETO CHEESY KETO CHEESY ASPARAGUS ASPARAGUS CASSEROLE CASSEROLE By Jennifer Vallee Holidays can be so much fun, especially getting to see family and friends you don't always see and make memo- ries. They can also be horribly stressful. With multiple fam- ily obligations it can be hard to schedule a get together for your immediate family, let alone extended families. Another problem that can come up is allergies and spe- cial diets. I was just getting used to my nephew's nut aller- gy when my mother-in-law starts on the Keto diet. Lucki- ly one of the best looking recipes on the Keto diet page on Facebook was made with asparagus, which my pregnant daughter has been craving a lot lately– Ack! I hope your Easter cooking was a bit less eventful and you enjoyed time with your family and friends. I also hope you like this recipe. Enjoy! INGREDIENTS • 2 bunches asparagus • 1 tbsp butter • 1/2 oz cream cheese, softened • 1/2 cup heavy whipping cream • 1 tbsp chicken broth • 1/4 tsp Italian seasoning • 1/2 tsp garlic powder • 1/4 tsp paprika • 1/8 tsp salt • 1/8 tsp pepper • 1/3 cup parmesan cheese, grated • 1/8 cup pepper jack cheese, grated • 1/2 cup mozzarella cheese, grated • 1/2 tsp red pepper flakes • 1/3 cup bacon, cooked and crumbled DIRECTIONS 1. Preheat oven to 400 degrees. 2. Wash and trim the asparagus, then grease the 9" x 13" baking pan and lay them in it. 3. In a skillet melt butter on medium heat, then add softened cream cheese, heavy whipping cream, chicken broth, garlic powder, paprika, Italian seasoning, salt and pepper. 4. Continuously whisk until the ingredients are thorough- ly combined. 5. Reduce to a medium/low heat and allow the sauce to sim- mer gently boiling until the heavy whipping cream has reduced and thickened. Keep whisking so that it doesn't stick to the bottom of the pan. It will take a few minutes for the sauce to reduce and thicken. 6. Once it has thickened, add the Parmesan and pepper jack cheese then continue to stir until the cheeses melt and the sauce is smooth. 7. Pour the cheese sauce over the asparagus down the middle of the casserole dish, avoiding the tops of the asparagus. 8. Next, sprinkle the mozzarella cheese and crushed red pepper flakes on top of the cheese sauce. 9. Bake for 15 minutes. 10. If you prefer crunchier asparagus, you can reduce the baking time for 2-3 minutes. 11. Remove from oven and add bacon crumbles to the top. 12. Bake for another 3 minutes and enjoy! The trip was centered around a parade at Universal Studios in Orlando. The students had the opportunity to go to Cocoa Beach, Florida and dip their feet in the ocean. They also visited Universal Studios Theme Park, Disney Springs, Medieval Times Dinner Theater, and Volcano Bay Water Park. "The Band wants to thank all the community members and businesses who donated to the trip," said Band Director Chris Ashworth.
