CCC Yetis Cross Country Team Competes The CCC Cross Country team traveled to Columbia, SC to compete in the Koala Classic hosted by Columbia College. Lily Clark (North Gaston, 2021) was the top fi nisher for the women's team, fi nishing the 6K run in 32.17. Clark's time placed her in 2nd place among junior college runners which included competitors from Spartanburg Methodist and Sandhills CC. "Lily ran an excellence race over a longer distance that usual," said Coach Steve McCachren. "She maintained her pace and fi nished strong against a good fi eld." The meet attracted numerous colleges including Belmont Abbey, Lander, USC Aiken and Converse. The Yetis next meet will be on October 15 in Salisbury at the Livingstone XC Invitational. Submitted by Paula Vess Coach McCachren and Lily Clark. CAKE 1 (18-1/4) box Duncan Hines Coconut Supreme Pefectly Moist Cake 4 Eggs 1 (3 oz.) pkg. Vanilla instant pudding 1 (3 oz.) pkg. Orange gelatin ½ cup oil 1-1/2 cups milk FILLING 1 (15oz.) can crushed pineapple, drained well 1 (12 oz.) package frozen fl aked coconut 1 (18 oz.) lite sour cream 2 cups sugar TOPPING 1 (8 oz.) container LITE Cool Whip, thawed 1 cup fi lling mixture For Cake: Mix all ingre- dients. Beat 3 minutes on medium speed. Pour into 3 greased fl oured 9 inch cake pans. Bake at 350 degrees for 30 mins or until done. Let layers cool. For Filling: Mix ingredi- ents. Reserve 1 cup of mixture for topping. Spread fi lling between layers and on top of cake. For Topping: Mix together ingredients. Spread topping on sides and top of cake. Filling is already on top of cake.
