16 NORTH BAY WOMAN F A L L | W I N T E R 2 0 2 1 By Chef Anja Lee Wittels M any people hold the false impression that healthy cooking is the hardest kind. From my years of experience, I can tell you that the hardest part is getting yourself into the kitchen to begin with! The holidays are a busy time, but I fully believe that tasty food is the best way to connect with your loved ones and make memories to last a lifetime. Even better is when it is healthy for everyone and makes you feel great after eating it. I treasure the memories of my first moments in the kitchen, cooking for my family over the holidays, and watching their faces as they tasted my food and compli- mented my 13-year-old self on food that was sub-par at best. That dinner was a magical moment, and it was then that I knew I loved cooking for others and myself. It's easier than it seems to make a "fancy" meal that will have your guests begging for leftovers. I have included some of my favorites below to provide you with a menu of sorts, walking you through delicious pro- sciutto-wrapped dates for a snack- like appetizer, an easier-than-it-seems yet oh so delicious grilled tri-tip with chimichurri, roasted parsnips that taste like candy, sherry-braised green beans that will have even the most vegetable-hating child asking for more, and my signature Dark Choco- late Apple Crumble for dessert! You can find the following dishes and many more in my cookbook, "How to Cook Healthier!" Prosciutto-wrapped dates stuffed with roasted almonds are the per- fect finger-food to leave out for your guests as they are walking in, grabbing a drink, and mingling while Host a Healthier Holiday Tasty food is the best way to connect with your loved ones Above: Chef Anja Lee Wittels' popular dark chocolate crumble made with apples and almond flour, topped with ice cream, oozes with richness.
