Rutherford Weekly's Favorite with M.A. ANDREWS This week I am going to use Rutherfordton's Second Baptist Church "Recipes & Memories" cookbook. It's a cookbook chock full of great recipes. I'm going to get started with one of the most requested breakfast recipe. It is not only good, but by making it the night before, you have time to spend with your guests. It also allows the cook to sleep later than usual. CASSEROLE Breakfast Casserole JENNIFER LANDIS shares her version of the famous recipe Breakfast Casserole! 12 slices buttered bread; 1 pound sausage, cooked and drained; 8 eggs, well beaten; 3 cups milk; 1 cup grated cheddar cheese. Put 6 slices of buttered bread - butter side DOWN - in casserole dish. Put 1/2 of cooked sausage and cheese over bread; Combine eggs and milk and pour over bread and sausage mixture. Top with remaining bread, buttered side UP and remaining sausage and cheese. Press bread down to absorb milk. Cover and refrigerate overnight. The next day set out the casserole a half hour before baking (30 minutes). Bake for 1 hour at a preheated 350º oven. Terrific, easy and no mess. The best part is that it is sooooooo good. Knowledgeable care you can trust to get you back on your feet. As a former tennis coach, Mark Brown was familiar with the physicians at Rutherford Orthopaedics. So when he suffered a torn meniscus, he knew he would have it repaired by Dr. Charles Bond. "The surgeons are so knowledgeable and good at what they do, and they always put the interest of the patient first," Mark says. Cancer Program Family Care and Pediatrics General Surgery Home Care Rutherford Orthopaedics offers a full range of care, from foot and ankle care and joint replacement surgery to sports medicine and rehabilitation. MyRutherfordRegional.com/Orthopaedics Beef Casserole Here's an all time favorite. You can use ground beef, ground chicken or ground turkey. YVONNE HOLLAND shares her recipe for Beef Casserole. 4 small potatoes; 4 small onions; 4 small carrots; 2 teaspoons salt; 1 pound of ground beef; 1/4 teaspoon pepper; 1/4 teaspoon thyme; 1/4 cup water; 1 can tomato paste. Put 1 teaspoon sale in meat and brown; drain and set aside. Cut vegetables small and mix rest of ingredients together and pour into casserole dish. Bake at 350º for 1 1/2 hours. (Tip: I even did this recipe with sausage and served it for breakfast). Imaging Orthopaedics Women's Services/Birth Place The outpatient procedure went smoothly, Mark says, and he'll be back to the tennis court in no time. "Choosing them for my care was a no-brainer." CASSEROLE Wound Care Urology Steaks Pepper Steaks I made this last Sunday and it was very well received by the family. They said: "Do it again!" OPAL GUFFY made me popular with this recipe. Pepper Steaks. 2 round steaks; 1 1/2 green peppers, cut into strips; 1 onion, chopped; 2 cups rice; salt and pepper to taste; garlic salt to your liking; 2 tablespoons soy sauce; 1 cup water; 1 can mushroom soup; 2 tablespoons butter. Trim fat from steaks. Cut steak into strips and brown in butter. Remove from pan, add water, soup, and rice. Slowly simmer until done. There's only one thing left to do for this week: "Get in the kitchen and show the love!" Some of the best cooks in the world are right here in Rutherford County and our nearby neighbors! Their time tested recipes are the reason we all love a good home cooked meal. We proudly share these good recipes with you! It is all part of our being "Small Town Friendly!"
