An all time favorite of mine is pickled okra. Here I go with PEGGY GREENE’S recipe. This weeks reci- pes are coming from the cookbook put together by Rutherfordton’s New Hope United Methodist Church’s “A TASTE OF HEAVEN” cookbook. 2 pints okra (about 30 pods) 2 to 3 inches long, fits the jars better and are tender 1 cup cider vinegar 1/4 teaspoon water 2 tablespoons salt 2 teaspoons dill seed 4 garlic cloves 2 pods hot pepper 1/2 teaspoon powdered alum 2 pint fruit jars This recipe is a good way to start canning. The recipe will make 2 pints and you can do a couple pints at a time. Always remember, to follow canning recipes exactly! Do not change the recipe. Boil pint jars. Wash okra. Bring vinegar, water and salt to boil. Put 1/4 tea- spoon alum in bottom of each jar and place washed okra on top. To each pint, add 1 teaspoon dill seed, 2 garlic cloves and 1 pod hot pepper. Pour the boil- ing liquid into jars, enough to cover the okra. Remove bubbles;. process in water bath for 5 minutes. Do NOT use for 1 month. Tip: Store in a cool place. I make a couple jars at a time and usually don’t open any jars until Thanksgiving and Christmas. They are so good! This is a recipe that is right on time. Thanks to JOSEPHINE LILES I’m going to make SQUASH RELISH! If you never had it, you’ve been missing a real treat. 6 squash 4 onions 5 bell peppers 3 cups sugar 2 cups vinegar 2 teaspoons celery seed 2 teaspoons turmeric Cut vegetables in blender or finely chop. (I used food processor). Soak for 1 hour in 1/4 cup salt. Bring sugar, vinegar and spices to a boil. Pour over vegetables. Simmer 3 min- utes. Pour in clean, hot jar and seal. If you want to teach your children or grandchildren about canning, here is a great recipe to start them off. It will build their self- confidence and the smiles of satisfaction will light up their faces. Here is a recipe that has only three ingredi- ents and you freeze! This is CORNELIA PRINCE’S recipe for STRAWBERRY JAM! 1 gallon strawberries boiling water 6 cups sugar Wash and cap straw- berries, cover with boiling water for 3 minutes; drain. Add 4 cups sugar; cook for 8 minutes, start timing when mixture comes to a rutherford county cooks m.a. andrews Peggy Greene ★ Josephine Liles ★ Cornelia Prince rolling boil. Add 2 more cups sugar; cook for 8 min- utes more at a rolling boil. Let stand overnight. Put in jars and put in freezer. That’s it! When you can, always make sure you follow the exact recipes. Also make sure all vinegar used is 5% acidity. (Check the label). If you want to, and, believe me, I’d take this course. “Canning & Preserving Made Easy” is offered by the Rutherford County Cooperative Extension. The next course will be held Thursday, June 24 from 9am to 4pm (There’s a one hour break from noon to 1pm for lunch on your own). Morning session is ‘preservation and food safety’; after- noon session from 1pm to 4pm is ‘demonstra- tions and hands-on prac- tice.’ The $15 registration fee is well worth it and it also includes Ball Blue Book and all your sup- plies.
