The ���Good Eats from Buck Creek��� cookbook of the Buck Creek Baptist Church is always a delight to review. I���ll go to the kitchen and share some of their recipes. Let���s get started. QUICHE Beef Quiche KAY DUKES shares a great recipe for a sure-fire winner, Beef Quiche. 1/2 pound ground beef; 1 small onion chopped; 1/2 cup milk; 2 eggs; 1/2 cup mayonnaise; 1 tablespoon corn starch; 1/2 cup grated cheese; 1 unbaked pie shell. Cook ground beef and onion until brown. Pour off excess fat and set aside. Blend milk, eggs, mayonnaise, cornstarch, and cheese. Add to meat and onion mixture. Pour in unbaked pie shell. Bake at 350�� for 35 to 40 minutes or until set in center and lightly brown. This is so easy to make and so good to eat. It���s definitely a keeper. POT PIE Chicken Pot Pie There is nothing better in the cold of the winter than this tummy warmer. Chicken Pot Pie is a recipe from NANCY EDNEY. 3 cups cooked chicken; 1 can cream of chicken soup; 2 cans chicken broth; 2 tablespoons flour; 1 large can Veg-All drained; 1 cup sauteed chopped onions; 1 boiled egg; 1 can frozen biscuits. Mix all ingredients together and top with frozen biscuits. Bake at 375�� until brown and cooked thoroughly. SANDWICH Grilled Egg Plant & Sweet Pepper Sandwich A great sandwich I discovered in the cookbook is from MARY ANN GILBERT. You will find this in the super sandwich category. It���s that good. Grilled Eggplant And Sweet Pepper Sandwich. 2 medium green, red, or yellow sweet peppers; 1 medium eggplant (about 12 ounces) cut into 12 slices; 1 tablespoon olive oil; 8 slices French bread (1/2 inch thick); 4 ounces soft goat cheese (chevre); 1/4 cup Dijon mustard. Quarter sweet peppers lengthwise; remove and discard stems, seeds, and membranes. Brush eggplant slices with olive oil; Grill eggplant and pepper quarters on the rack on an uncovered grill directly over medium-hot coals for 4 minutes. Turn and grill 3-4 minutes more or until eggplant is tender and sweet peppers are slightly charred. Remove from grill; set aside. Spread 1 slice of each French bread slice with goat cheese and mustard. Layer eggplant sliced and 2 sweet pepper quarters on 4 of the bread slices. Top with remaining bread slices. Serve warm.
