Where does the time go? Let's begin this year with some great recipes from Bethel Baptist Church's "Forward by Faith" cookbook. I always think the creation of the casserole was for the South. It is definitely beloved in every Southern state. So, let's start off with come casserole recipes. BEEF Beef Casserole BETTY WRIGHT shares her recipe for Beef Casserole. 1 1/2 pounds ground beef; 1 medium onion, chopped; 1 cup bell pepper, chopped; 1 cup celery, chopped. Brown beef then drain; Cook onion, pepper and celery together. Mix and add to the beef mixture, 2 tablespoons Worcestershire sauce; 1 tablespoon mustard; 2 tablespoons barbeque sauce; 1 14.5 ounce bottle catsup; 1 large can of pork and beans. Bake at 350º for 30 to 45 minutes. Hearty and tasty. RAVIOLI Cheese Ravioli Casserole This recipe combines some favorite flavors. Cheese Ravioli Casserole is one of JANICE McFARLAND'S favorites. 1 package cheese ravioli; 1 large can white meat chicken, drained and flaked; 1 jar spaghetti sauce; 1 package (2 cups) shredded cheese. (I preferred mozzarella). Spray a 9 x 13" dish with non-stick spray. Boil cheese ravioli according to package directions. Place cooked ravioli in baking dish. Mix chicken and spaghetti sauce with a little water or ketchup. Pour this mixture over ravioli and top with shredded cheese. Bake at 350º until cheese is melted. VARIATION: Can substitute ground beef, pepperoni or turkey for the chicken. This is so versatile and a definite keeper. RICE Green Chile Rick Casserole Here is a unique and very delicious recipe from CRYSTAL HORN. Green Chile Rice Casserole. 3/4 pound Monterey Jack cheese; 1 4 ounce can green chilies, chopped; 3 cups (24 ounce) sour cream; 1/2 cup grated Cheddar cheese; 3 cups cooked rice. Cut Monterey Jack cheese in strips, 1/2 inches long by 1/2 inches thick. Mix sour cream, chilies and Cheddar cheese. In a buttered baking dish, layer rice, sour cream mixture and Monterey Jack cheese, ending with rice. Top with Cheddar cheese and dust with paprika. Bake, uncovered, at 350º for 15 minutes or until thoroughly heated. This is very tasty and a newly discovered casserole dish for those looking for a change. So that's it for this week.
