Dirk Flanigan Executive Chef - Ocean Cut E xecutive Chef Dirk Flanigan joined Ocean Cut in April 2016. A pioneer of restaurants such as e Gage and Henri, the Chicago-based chef 's culinary style has created a buzz with his forward thinking approach. Having grown up fishing with his family in Naples and South Florida for snook, snapper, sheepshead, grouper and bonito, he developed a culinary philosophy to let the fish be the highlight and enhance it simply. His love for fishing and cooking is complemented by his commitment to developing a culture based on quality and fresh ingredients. Chef Dirk's desire to expand his knowledge and hone his traditional and avant-garde skills has led him to create innovative dishes for the OCEAN CUT OCEAN CUT SEAFOOD & USDA PRIME STEAKS River North seafood concept owned by the team behind Chicago Cut Steakhouse. He works to ensure dishes are approachable yet still give diners a sense of adventure. You can check out his latest dishes at Ocean Cut, located at 20 W. Kinzie, in the heart of River North.
