oliday Magazine H T he winds of winter sweep us closer to home and s r our interest in those things that bring us closer together. Young adults return from college and career to reunite with their parents and childhood friends. Older adults' homes are reinvigorated with youthful exuberance as children and grandchildren get a respite from their restless schedules to reconnect with their elders. Much of the common joy of the holiday season centers around the dining room table, and more specifically, the spread of good cheer. Meals are unconfined from modern me- tables freeing up families to en- joy the spice of life, the salt of the earth and to savor precious moments. The eyes of both the young and old are fixated on food with all the fixings. Turkeys roasted tradi onally. Potatoes mashed from scratch. Stuffing stuffed with purpose. Tamales wrapped with tradi on. Christ- mas served with care. This year's Holiday Magazine focuses on the culinary arts born of Tulare County's agri- cultural bounty. Cul va ng the food that feeds the world is one of mankind's earliest talents long before there was a Christ- mas dinner. The process begins with a farmer tending his fields, then a processor who perfects the appeal of the produce. Next in the course of cuisine is the retailer who packages and promotes it to the public. The end of the chain is o en a new beginning, where homemade hands or ar san skill re-imagine what the farmer reaped. A cocoa bean becomes the shell of a fine wine truffle. A garlic bulb becomes the crust of perfectly cooked prime rib. As you lay your napkin across your lap and sit in an cipa on of the most sa sfying scene of the season, give thanks for the gi s of Tulare County and praise for those who prepared the present from the trees to your table and from the fields to your family.
