FOOD FOR THOUGHT Executive chef Devin Hashimoto at Okada OKOH,ADA J BRINGS SOMETHING NEW TO THE WYNN TABLE— AND TO YOURS. by max jacobson 110 WYNN CHEF DEVIN HASHIMOTO apanese cuisine has become firmly entrenched on the American restaurant scene, and savvy diners know that it is much more than sushi or teppanyaki. Okada, Wynn's sig- nature Japanese restaurant, keeps pace with that aware- ness, offering many different facets of this diverse cuisine in an unforgettable setting rivaling any on the Strip. One wonderful thing about Okada is the many types of Japanese dining available here, from a sushi bar manned by master sushi chef Masaru Matsuura to the dining-room menu, which runs the gamut from exotic soups such as lobster miso to chef's special- ties like Big Island abalone, where the rare mollusk is paired with sudachi garlic sauce, garlic chips and spongy, delicious eryingi mushrooms. That means one can dine casual, with a few orders of sushi at the bar, or formal, indulging in a full-blown Japanese feast in the dining room. Like all its sister restaurants at Wynn, Okada is dramatic to the eye, a sweeping suite of rooms framed by a bucolic pond and garden. Sliding- glass panels open to a waterfall and lush greenery, and tables along the wall affording this view are much in demand. A series of giant black chop- sticks with faux gold tips are arranged below the ceiling, a brilliant con- ceit that gives the room a Deco aura of luxury. It's no surprise the most sought-after seats skirt the rail next to the pond, graced by a floating island in its center. Poetically named the Floating Pagoda Table, this might be the most beautiful table in the entire hotel and is a most romantic one, though designed to seat 10. There is also seating at Okada's sushi bar, just across an exquisite wooden floor from the front podium, and in a private teppanyaki room, around grills where your meal is cooked in show-like fashion by a team PHOTOGRAPH BY VSPOTPHOTO.COM
