mal energy, and a composting system for wasted food called

The most popular way guests like to experience Bardessono's
sustainability practices is by enjoying a meal at their onsite res-
taurant, Lucy. Lucy's Garden, named after passionate gardener,
ardent home cook and matron of the Bardessono family, spans
nearly an acre and is sourced daily by Bardessono's chefs.
The staff encourages guests to join the chef on trips to the gar-
den. Those who do are sure to find unusual crops such as Paki-
stani Mulberry trees, which produce fruit similar to a blackberry,
pineapple tomatillos, lime thyme and 31 types of tomatoes.
Bardessono's Executive Chef Victor Scargle says, "Our philoso-
phy here at Lucy is what's in the garden goes on to your plate."
Lucy's staff is hands-on when it comes to farm-to-table practices
saying, "We are the gardeners here at Lucy and that's what sepa-
rates us from other restaurants. We're the ones digging, we're
the ones buying and we're the ones planting what goes on your
plate."
Bardessono's 62 contemporary guest rooms feature spacious
bathrooms large enough for private in-room spa treatments, gas
fireplaces, and organic bedding.
Lucy is open to the public for breakfast, lunch and dinner
Monday through Friday and brunch on the weekends.
