Bobbie Peters, owner of the restaurant and café that currently sits in downtown Waukesha, said that she hopes the Brookfield location will be open by Thanksgiving. In addition to scratch bakery the café is set to release a , new menu containing breakfast and lunch items. The café, which features specialty sandwich options daily – including a build-your-own sandwich – is also working on bakery items that are diabetic-friendly . "The ingredients are local, and you will find nothing from a box in our kitchen," said Peters, who calls what the café serves "whole food." "We even shuck our own corn." Since catering birthdays, weddings and other events is already a large part of the café's business, Peters, who has 12 years' corporate event planning experience, hopes to expand her staff of partyplanning professionals. Her current staff already gets plenty of experience creating cakes for these events. As her lease in the Main Street Plaza will be coming up this spring, Peters is already "in talks" to open a new Waukesha store, perhaps off Highway T and in one of the new Sunset Drive developments. She is not totally opposed to staying in downtown Waukesha, saying that business is good during scheduled weekend events, especially during the summers. But Peters said that opening multiple stores has always been in her business plan. "Starting in Waukesha gave us an opportunity to learn who we want to be," she said. The Waukesha café features full-service Colectivo (formerly Alterra) coffee drinks and free wireless Internet access.
