TASTE sky high WITH A NEW CHEF AND SUMMER MENU, THE SIGNATURE ROOM AT THE 95TH CELEBRATES ITS 20TH ANNIVERSARY IN STYLE. Girl and the Goat's sautéed green beans. restaurants that rock LOLLAPALOOZA CREATOR PERRY FARRELL DIGS CHICAGO'S SUMMER DINING SCENE. BY ELLE EICHINGER W hen Lollapalooza went from a traveling tour to a single-city music festival in 2005, founder and Jane's Addiction frontman Perry Farrell settled on Chicago as the ultimate place to host it. "We had to find the best location," Farrell says. "Grant Park absolutely became that amazing destination." Now the rocker calls the Windy City home for a few days each August. This year Farrell—a passionate foodie who serves as an ambassador for Dobel Tequila—plans to hit some of his favorite local dining and nightlife destinations. Graham Elliot "We started going to Graham Elliot a few years ago to have a pre-Lollapalooza dinner there—we bring the whole staff. I don't know what kind of fare you would call it, maybe American-experimentaldelicious [like the] quail egg burger and the lobster corn dog. [Graham is] on the top of my list because he curates Lollapalooza's food court. There's an art form in feeding that many people, and he certainly does that." 217 W. Huron St., 312-624-9975; grahamelliot.com Girl and the Goat "I was so interested to [try Girl and the Goat]—I had goat carpaccio for the first time. What's so amazing about the restaurant is that it has a bakery; there are some breads that are magnificent. Oh, and TWENTY YEARS AFTER The Signature Room made its debut 1,000 feet above Michigan Avenue, the Chicago icon is aiming for new heights under the guidance of new Executive Chef Rosalia Barron. A Cordon Bleu–trained veteran of Frontera Grill, Naha, and Trio, Barron is excited for what's cooking and chilling this summer. "We're talking about the greatest gazpachos ever," says Barron, whose Rosalia Barron plans include pairing a yellow heirloom tomato gazpacho with house-made cilantro-jalapeño sorbet. The chef is eager to showcase the best of the season not only because of the weather, but also because of her passion for local produce. "Guests come from all over the world to visit Chicago," she says. "It's important to show what grows in our area, what our farmers are doing, and how we are supporting each other." At the end of the day, Barron wants to stay on her ingredient-driven toes. "That is my goal: to keep [the menu] fresh and keep it new." 875 N. It's a great place to be cool and feel a little bit of rock 'n' roll." 833 W. You'll find incredible wines at Spiaggia, and they'll be serving caviar. I love having it with Champagne as a starter before a meal. That's a special night." 980 N.
