EASY PAD THAI MEALS IN Monica's MINUTES By Monica Sinclair One of my all-time favorite Thai dishes is Pad Thai. I like other dishes, but I have such a hard time order- ing anything other than Pad Thai when I go out to eat at a Thai restaurant. I have always avoided attempting to make it at home because it seemed so daunting. Howev- er, the recipe I found this week makes it sound much eas- ier, so I think I'm going to have to try it. It calls for pork, but I like my Pad Thai with chicken, so I might swap that ingredient. Enjoy! INGREDIENTS • 4 ounces uncooked thick rice noodles • 1/2 pound pork tender- loin or chicken, cut into thin strips • 2 teaspoons canola oil • 2 shallots, thinly sliced • 2 garlic cloves, minced • 1 large egg, lightly beaten • 3 cups coleslaw mix • 4 green onions, thin- ly sliced • 1/3 cup rice vinegar • 1/4 cup sugar • 3 tablespoons re- duced-sodium soy sauce • 2 tablespoons fish sauce or additional re- duced-sodium soy sauce • 1 tablespoon chili gar- lic sauce • 1 tablespoon lime juice • 2 tablespoons chopped salted peanuts • Chopped fresh cilant- ro leaves, lime wedges and fresh bean sprouts DIRECTIONS 1. Cook noodles according to package directions. 2. In a large nonstick skillet or wok, stir-fry pork or chicken in oil over high heat until lightly browned; remove and set aside. 3. Add shallot to pan and cook until tender, about 1 min- ute; add garlic and cook 30 seconds. 4. Make a well in the center of the onion mixture; add egg. Stir-fry for 1-2 minutes or until egg is com- pletely set. 5. Add the coleslaw mix, green onions, vinegar, sugar, soy sauce, fish sauce, chili garlic sauce, lime juice and peanuts; heat through. 6. Return pork to pan and heat through. Drain noodles; toss with pork mixture. Garnish with cilantro, addi- tional peanuts, lime wedges and bean sprouts. One of the most important things we can do for ourselves is ensure we are tak- ing good care of our body, mind, and soul each and every day. Self-care is a hab- it we need to develop and use daily, not just when we are sick or feel it's most con- venient. Learning how to eat right, reduce stress, exercise regularly, and take a time-out when you need it are big com- ponents of self-care. Making a point to in- corporate these habits into your life can help you stay healthy, happy, and resil- ient. Practicing self-care isn't always easy. In fact, it's an ongoing battle I fight with year in and year out. Most of us are cra- zy busy. There are extracurricular activ- ities to juggle, sporting events to attend, and of course our jobs to work around. Having a full and fast-paced life can be rewarding, but can also become burden- some from time to time. As the pandemic continues to impact our daily lives, now is a good time to re- flect on the past year and remind our- selves about the importance of self-care. Below you'll find several different tips, ideas, and reminders to help you man- age your mental health through self-care. Create a plan. Creating a self-care plan can make managing self-care easi- er. When life gets busy, it's easy to forget to take care of yourself. Making a plan and sticking to it helps release the stress of managing another "task" on your to- do list. Say "no" to others. Saying "no" is a hard thing to do for some people. How- ever, saying "no" when you're feeling overwhelmed or when you need a day to yourself can be a powerful way to care for yourself. Do things that spark joy. Self-care is all about doing something specifical- ly for you. Do one thing daily that sparks joy in your life. Examples of this could be a simple coffee run, getting up to go for a walk around the block, or even watching an episode of your "guilty pleasure" show. Soak up the sun. As the days are beginning to lengthen as summer ap- proaches, we have more time to enjoy the sunlight after school or work. Just getting 10 minutes of sunlight or hav- ing those blinds in your bedroom win- dow open can spunk up your mood and provide you with much-needed Vitamin D. Be sure to wear sunscreen if you'll be outside for extended periods of time! Don't skip out on the basics. Contin- ue to eat healthy, exercise regularly, and get a healthy amount of sleep. Some of these tips may sound silly or obvious, but it can often be hard to prior- itize that extra time to ourselves. It's im- portant to create time in your day to be alone with yourself, no matter how busy you are. Time alone can help you ponder the best way to move forward in life and keep you grounded, healthy, and happy.
