MEXICALI HASHBROWN TACO CASSEROLE MEALS IN Monica's MINUTES By Monica Sinclair I was looking through my saved recipes on Facebook trying to find a recipe for this week. I would say 95 per- cent of them are desserts. I guess that says something about us. However, I did manage to find one that wasn't sweet. It's a hearty one and will be perfect for a family. It's a Mexican version of shepherd's pie. Enjoy! INGREDIENTS • 1 lb 90 % lean ground beef • 1/2 cup diced green bell pepper divided • 1/2 cup diced red bell pepper divided • 1/2 cup corn • 1 pkg taco seasoning • 10.5 oz condensed to- mato soup • 3 oz low fat cream cheese • 1/2 cup chopped on- ion divided • 2 cups Mexican-style shredded cheese di- vided • 1 tsp salt • 1/2 tsp pepper • 15 oz frozen hashbrown potatoes thawed INSTRUCTIONS 1. Preheat oven to 350 degrees F. Lightly grease or spray a 2 or 2 1/2 quart oblong casserole dish. 2. Brown ground beef, half of the bell peppers and on- ion in a heavy skillet over medium-high heat. Drain fat from pan, reduce heat. 3. Add the undiluted tomato soup, corn and the cream cheese. Stir until well combined and no chunks of cream cheese are visible. Stir in taco seasoning and 1 cup of the shredded cheese. Turn mixture in- to prepared pan, spreading mixture evenly across the bottom. 4. In a separate bowl, combine the defrosted hash browns, the remaining peppers, salt, pepper and re- maining 1 cup shredded cheese. 5. Top ground beef with potato mixture, pressing it down slightly. 6. Bake at 350 degrees F for 30 -35 minutes or until top- ping is browned and crispy on top. Source: bakeatmidnite.com YOUTH FIRST TODAY What does it take to create a healthy generation? By Krissy Melhiser What does it take to see our children grow to be strong and healthy? Is it ev- eryone's responsibility? Parenting can be so difficult at times. It seems like an endless pursuit, and you wonder if the tireless chase will result in a positive outcome. As a school social worker, I hear countless stories of the hardships parents face with their kids. Through the ups and downs, I often won- der as each generation faces the same foundational issues, what does it take to produce a healthy generation? Since being in high school myself, I have seen an increase in anxiety and de- pression in young people. A world that is constantly transforming provides a mul- titude of reasons for this increase in men- tal health challenges. How can we ensure the next generation isn't forced to grap- ple with more issues than the previous generation? So what is needed? Change. A word like "change" can be so simple to under- stand, yet it may be one of the most diffi- cult to put into action. Change requires looking beyond our circumstances to find the root of the is- sues younger generations face. Most of us would find it is easy to change our laundry detergent or perhaps make small changes in our routine, but deep-rooted change takes more time and commit- ment. So what can we do as parents, guard- ians, and youth advocates who have an in- fluence on younger generations? First we must turn inward, observe, and recognize what we need to own up to. As parents, we are not given an in- struction manual. Much of what we know is learned from our own parents. Recog- nize that not everything we are taught is good or healthy. Therefore, it's import- ant for all of us to be introspective and make changes where they are necessary. The definition of insanity is "doing the same thing over and over again and ex- pecting a different result." If we do the same things over and over, how can we expect change to occur for ourselves and those around us? Lead by example. Envi- sion yourself looking into a mirror, but on the other side is not your reflection; it's your child's reflection instead. With ev- ery movement, word, attitude, and deed they mirror you. Are you okay with the reflection you see? To create change, sometimes genera- tional bonds of negative unhealthy hab- its need to be broken. As human be- ings we have proven that we can and have evolved. Therefore, we know that change can happen if we commit to see- ing it through. My challenge is this: Ask yourself what you need to own up to. You and your kids will be better for it. The negative gener- ational cycle can and needs to be bro- ken, not only for your own mental health and well-being, but also for the benefit of your family, community, and society as a whole. It's our responsibility to produce a gen- eration that can take on the future with- out unnecessary hurdles. Our actions have a ripple effect on so much more than we realize.
