Richie Farina is a Michelin-starred chef who earned his stripes at Chicago's Moto, a ground- breaking molecular gastronomy restaurant known for creating high-tech dishes and incorporating elements such as carbonated fruit, edible paper and liquid nitrogen into its fare. Such outside-the-box thinking is Farina's strong suit, so when the opportunity arose for him to host Cooking Channel's "Carnival Kings," he jumped. The series, which premieres with the first of eight half-hour episodes Thursday, July 12, takes Farina to county fairs in California, Nevada and Arizona, where he attempts to re-create imaginative, outrageous and oversized carnival dishes using his scientific approach in cook-offs with the chefs who created them. In the opener, he visits the Pima County Fair in Tucson, Ariz., and tries his hand at making a bacon-wrapped duck breast slider with caramel apple slaw. "I make a rainbow-colored slaw," Farina explains. "Essentially, you can take red cabbage and when you play with the alkalinity scale and the acidity scale – say you take something like baking soda and add it to cabbage juice, it turns blue." If you take acid and add it to the cabbage juice, it turns pink. So being able to use natural food coloring, for lack of a better term. And also blue isn't a natural thing you see in food, so being able to ... have very distinctive, not- normally-seen colors in food but have it be done in a natural way rather than just adding food dye to something (is fun)."
